IMPORTANT ANNOUNCEMENTS

June 18 (Saturday) Annual Member Meeting. Noon, potluck with meeting to follow. Valley Unitarian Universalist Church, Religious Education Building 6400 W. Del Rio St., Chandler, Arizona. Take the Ray Road exit from Interstate 10. Go approximately 1 mile east, to McKemy (stoplight). Turn right (south) to the driveway immediately before the stop sign. That will bring you into the church parking lot. Go across the lot to the far (west) side. Room 1. We urge members to attend. This is the meeting where board elections occur. We are adding at least 2 new board members.

Dry Camp !!! Eb Eberlein reports from the Memorial Day gathering that SAWUURA's pump has stopped functioning and that the water storage tank is nearly dry. Apparently this is a mechanical problem, not a lack of water in the well. The facilities committee and board of trustees are moving ahead on a fix, but doing so may take a month or more. We are confident that the water system will be back up well before Labor Day, but until the situation has been corrected, SAWUURA must be regarded as a dry camp. If you want to visit you'll need to bring your own water, no camp fires can be permitted in the fire circle (or anywhere else) and use of camp stoves must occur in the kitchen area, either on the stove counter or on one of the picnic tables. As always, lanterns are limited to battery power. Sorry. As soon as the water system is operational again, we will let you know.

Call for Material The Publicity Committee would like to see the newsletter develop into a forum available for sharing news and experiences among SAWUURA members and friends. We invite you to send short pieces that are not only related to SAWUURA stories of visits, news of members past and present, birding at SAWUURA, history of the camp and members or of the Pleasant Valley area—but also pieces related in any way to the outdoor experience in Arizona. Would anyone out there like to start a column (regular or semi-regular) on one of these topics or perhaps another topic not listed here? (The first of such columns appears below.) If you go up to SAWUURA and would care to share a report (even just a brief paragraph), we'd be happy to have you share it here.

Everything tastes better in the great outdoors, and even those of us who ordinarily start the day with just coffee often appreciate a hearty breakfast when we're camping. Pancakes, with or without accompanying eggs or breakfast meats (or veggie sausages, etc.) can really hit the spot. Here's my recipe for an easy pancake mix. This quantity makes about 6 good-sized pancakes (enough to feed 3 fairly hungry adults); you can double or triple it to make more (or to have some to keep in the freezer to have it handy at home.

Easy Whole-Grain Pancakes
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 T. sugar
1/3 c. powdered milk (optional)
Powdered egg substitute to equal 1 egg (optional)

Mix all the dry ingredients together at home and put into a Ziploc bag. Then when you get ready to make pancakes at camp, just add:1 cup of milk (or water, if you used powdered milk in your mix), 1 egg (if you didn't use powdered egg substitute), and 1 T. oil. You're aiming for a batter about the consistency of thick cream. Mix well and cook over medium heat on a lightly greased pan or griddle (cast iron if you have it) until bubbles form and burst around the edges of the pancake and the edges firm up, then turn and cook the other side. You can tell your pan is hot enough when a few drops of water jump and skitter when sprinkled on the pan surface.

Variation: You can substitute other flours or grains for up to half the whole wheat flour. My family likes a multi-grain pancake, using 1/2 cup whole wheat flour, 1/4 cup cornmeal, and 1/4 cup buckwheat flour. Be creative. Try wheat germ, ground oatmeal, oat bran, or some other interesting grain to vary the taste and texture.

Note: If you make this up in quantity, use a slightly heaping cup of mix (1 1/3 cups if you include the powdered milk), plus the milk (water), egg, and oil to make 6 pancakes, or half that much to make 4 smaller pancakes, which is about right for 2 servings. Serve with maple syrup and butter or, if you're lucky enough to be camped where there are berries to be picked, make a syrup/sauce by simmering fresh berries with sugar and a little water.
